1. Chicken – 1 kg
Curd – 1/2 cup
2. Greenchilli / Crushed – 12 no’s
Medium size onions thinly sliced – 4
Shallots sliced – 10 no’s
Ginger /crushed – 6 pods
Garlic /crushed – 3 pieces
Turmeric powder – ¼ tsp
Salt – to taste
3. Ghee – 1 cup
4. Tomato – 1
Coriander leaves – 1 bunch (shredded)
Mint Leaves – 1 bunch (shredded)
Lemon juice of 1 lemon
Garam Masala Powder – 2 tbsp
Chili powder – 1 tbsp
Coriander powder – 1 tbsp
Kismis paste (raisins paste) – 2 ട്സ്പ്
5. Star anise-4
Cloves – 6
Cardamom –6
Cinnamon – 2 stems
6. Rice – 750 gm (approx 5 cups)
Water – 4 cups
7. Cashew nuts -10
Raisins – 10
Preparation Method:-
- In a Pan, heat ¾ cup Ghee. Add the items mentioned in step 2 one by one starting with onions and Sautee well. Onion Becomes Translucent as shown in the picture.
- Add Ingredients mentioned in Step 4 and fry the mix well till oil comes out.
- To this mix add chicken and curd and mix the contents well.
- When the Gravy thickens ( takes ½ an hr in medium flame) keep it aside removing from the fire
- Fry cashews and raisins in the rest of the ghee and keep it for garnishing.
- Rice Preparation:
In a big pot heat up some oil or ghee and add step # 5. Add Rice to it and sautee for 5 minutes (this helps the rice from sticking together).Add water and salt to it and cover the pot with a lid . Once the rice is partly done remove it from the fire. Pic 3
- Layering method:
Layer the bottom of the pan with rice. Then layer with some gravy and repeat the process till it is done. Rice should be the topmost layer. Decorate with fried nuts.
Make small holes in the rice and put some butter into each hole. Steam it in medium flame for 20 minutes.
Once done. Mix the rice well and serve it.
